Trentino is famous for the production of sausages and meat
The famous Alto Adige IGP speck is produced from a raw, boneless pork shoulder which is seasoned and smoked for preservation. Trentino is well-known for producing Italian dry-cured ham which is made of a far less-smoked, boneless pork thigh. After having been dry-salted with a mixture of aromatic herbs, the dry-cured ham is exposed to braziers. The smoking process lasts only one week.
The traditional Carne salada is a very lean meat which is dry-coated with salt and other spices. It is cut in very thin slices and served with Parmesan cheese flakes and arugula. Otherwise it could be cut in thicker slices, seasoned with olive oil and some drops of vinegar and pan-fried before being served on a warm plate. A mouth-watering dish!
